To break things up a bit, while you are in Hong Kong, you can take a day trip to Macau.

Macau (or Macau in Portuguese) is an autonomous region located on the southern coast of mainland China, separated from Hong Kong by the Pearl River Delta. A Portuguese territory until 1999, it is characterized by a mix of cultural influences. For its large casinos and shopping centers on the Cotai Strip, which connects the islands of Taipa and Coloane, it is called the "Las Vegas of the East." It is easily accessible from Hong Kong with a quick hydrofoil ride. Go to the Sheung Wan ferry terminal and buy a Turbo Jet ticket to the Macau outer ferry terminal. In 55 minutes you will have arrived at your destination. First of all, I suggest you take a tour of the historic center. From the arrival terminal, take one of the free shuttle buses from the following hotels: Sintra, Lisboa, Wynn Macau, or MGM Macau. It doesn't matter if you are not staying at any of these hotels or if you never set foot in them: no one will ask you anything and they will take you to your destination without any problems.
Once in the center, head towards Senado Square: a paved square, elongated and triangular in shape, surrounded by colorful buildings. Continue towards the Church of St. Dominic and the ruins of St. Paul's Cathedral, of which only the facade remains. Climb the staircase dotted with green gardens up to the top, from where you can appreciate the strong contrast between the old city and the modern one with its casinos. Follow the crowded streets of the center and stop to admire the Grand Lisboa Hotel: the historic golden casino with its unique shape.
Go to the Grand Emperor Hotel and take the shuttle to the City of Dreams where you can attend one of the most incredible theater shows of your life. Before you leave, remember to buy a ticket for the show The House of Dancing Water:
a theatrical production entirely focused on water, written and directed by Franco Dragone, a famous Las Vegas director. The show was first presented in September 2010. By February 2013, it had been performed over 1,000 times and seen by over 2 million spectators. The performance lasts 90 minutes and offers acrobatic elements and original acts, with a hyper-technological stage that transforms into different sets. More than 80 gymnasts, circus artists, dancers, divers, actors, and motorcyclists are in the show. I don't want to spoil the surprise by telling you what you will see, I'll just say that it was the most exciting and incredible show I have ever attended: it's worth the trip to Macau!
At the end, take a walk inside the casino and try your luck at the slots or tables. If you feel like having a drink, you just need to go to one of the many bar corners in the gaming hall where you will be offered tea or soft drinks for free (in Macau they do not serve alcoholic beverages).
Go out and get on the cable car (yes, you read that right!) at the Wynn Macau. Admire the panoramic view and enjoy the dancing fountains set to music. Every half hour a different choreography is presented with the fountains shooting up to the height of the casino. Don't miss the chance to take a tour inside the Wynn to admire its luxury with shiny marble floors and refined decorations.
Then continue to the Venetian, easily identifiable by the St. Mark's Campanile towering above. Inside you can take a gondola ride along the Grand Canal.
Finally, night has fallen and Macau lights up with a thousand lights. Enter the Parisian and go up the Eiffel Tower: from here the view is magnificent. Admire the choreographic perfection of the gardens and pools! It's almost midnight and it's time to return to Hong Kong using the last shuttles to the ferry terminal.

For the Macau tour, remember to bring your passport with you.
